We love to play with flavours at the Cocoa Jones Chocolate Factory. This week, as spring emerges, we’ve been adding herbs to our bon-bons.
We’ve made a pear ganache, sweet and luxurious but laced with a hint of basil, to provide a peppery touch of spice. Whilst in our coffee bon-bons, made with single origin expresso, we’ve added the fragrancy of the Queen of Spices, cardamom.
Cardamom originates from southern India and is the third most costliest spice in the world after vanilla and saffron. It also happens to be surprisingly popular in Scandinavia, where it’s been a staple for several centuries.
Herbs and chocolate may not be an obvious pairing but we think the velvety texture and floral tones of our house milk chocolate contrast rather well with the savoury notes of these particular herbs.
